Original Fried Chicken

Ingredients

  • 6 chicken drumsticks
  • ½ C gluten free flour
  • We use buckwheat flour or brown rice flour
  • 3 - 4 Tbsp of spices of your choice
  • We like using combos such as smoked paprika, turmeric and a little ground chilli
  • Salt and pepper
  • Extra virgin, cold pressed oil

Directions

  1. Heat oven to 200ºC on fan bake. Grease or line an oven tray.
  2. Mix flour, spices and salt and pepper in a bowl or on a plate.
  3. Roll the drumsticks in the mix until they’re really well coated
  4. and place them in the oven tray with a wee gap in between each.
  5. Drizzle a few big glugs of oil to the drummies—you do need a decent amount of oil all over them to make sure they’re nice and crispy. Make sure you get both sides.
  6. Pop them in the oven for about 30 - 40 minutes, or until the chicken is cooked through and nice and crispy.

Extra Crunchy Fried Chicken

Ingredients

  • 6 chicken drumsticks
  • ½ C gluten free flour
  • We use buckwheat flour or brown rice flour

  • We like using combos such as smoked paprika, turmeric and a little ground chilli
  • Salt and pepper
  • 2 eggs
  • Gluten-free bread crumbs
  • Extra virgin, cold pressed oil

Directions

  1. Heat oven to 200ºC on fan bake. Grease or line an oven tray.
  2. Mix flour, spices and salt and pepper in a bowl or on a plate.
  3. Beat the eggs and pour onto a plate.
  4. Add a generous spread of gluten free bread crumbs on another plate.
  5. Roll the drumsticks in the flour and spice mix, then the eggs and finally the breadcrumbs - make sure at each stage they’re really well coated.
  6. Place them in the oven tray with a wee gap in between each.
  7. Drizzle a few big glugs of oil to the drummies—you do need a decent amount of oil all over them to make sure they’re nice and crispy. Make sure you get both sides.
  8. Pop them in the oven for about 30 - 40 minutes, or until the chicken is cooked through and nice and crispy.
