Our healthy twist on rocky road is packed with nutritious nuts & fruit, all wrapped in a delicious fudgy chocolate bar. It's also dairy-free and gluten-free! Just make sure to choose a dairy-free chocolate.
BePure Recipe: Festive Rocky Road Bars
INGREDIENTS:
- 1.5 cups roasted nuts (we used almonds & walnuts)
- 1.5 cups toasted coconut flakes
- 1/4 cup prunes or dried figs, torn into pieces
- 1/4 cup goji berries
- 200g dark chocolate (we used 90% cacao - choose DF if required)
- 1.5 cups almond butter
- 1 Tablespoon coconut oil, melted
DIRECTIONS:
- Line a rectangular loaf tin with baking paper
- Sprinkle around half of the nuts, coconut flakes, goji berries and prunes into the tray
- Melt the chocolate and coconut oil in a double boiler, until smooth
- Add the nut butter to the chocolate, while keeping on a low heat. Use a whisk to combine until smooth
- Pour half of the chocolate mixture into the tray, covering the nuts etc
- Sprinkle more nuts, coconut flakes, prunes and goji berries over the chocolate layer, reserving a few to top
- Pour over the last of the chocolate
- Top with leftover toppings
- Place in freezer for 1hr
- Slice and store in the fridge or freezer! For a more fudge-y bar, store in the fridge. Enjoy!
