The Ingredients

1 tsp oil & 1 carrot (grated)

500g lean beef mince

1 tsp each: lemon pepper, paprika

1 cup chicken stock
Greek Salad & Dressing

2 cans lentils (drained & rinsed)

1 cucumber & 2 tomatoes (diced)

175g feta & 70g mixed olives

100g baby leaf lettuce

Dressing: ½ tbsp olive oil, 1 tbsp water, 1 lemon (juiced), 1 tsp each: wholegrain mustard, honey.
The Method

Sizzle: Brown grated carrot and beef mince in oil on high heat (approx. 4 mins).

Simmer: Reduce heat to medium. Stir in cornflour, spices, and stock. Simmer for 4 mins until thickened.

Toss: Combine all salad ingredients in a bowl. Whisk dressing ingredients together and pour over.

Serve: Divide the spiced beef and fresh salad between bowls.
