Chicken & Toppings

400g chicken breast (cut into steaks)

The Method

Roast: Preheat oven to 220°C. Toss broccoli and seeds with oil, salt, and pepper. Roast for 10–12 minutes until tender.

Sear: Cook chicken steaks in a hot pan for 3–5 minutes per side until golden and cooked through. Rest before slicing.

Whisk: Mix dressing ingredients in a large bowl. Toss in kale and spring onion.

Combine: Add the roasted broccoli and seeds to the dressing bowl.

Serve: Divide the greens into bowls. Top with chicken, radish, kraut, coriander, and a squeeze of lime.
