BePure Recipe: Meal Prep Salad Jars
Ingredients (makes approx 4 jars)
Salad:
2x small heads of cos lettuce
2x capsicum
1x avocado
1/2 a red onion
1x punnet cherry tomatoes
1x can of drained chickpeas
Dressing:
2 Tbsp balsamic vinegar
2 Tbsp olive oil
1 tsp honey
2 tsp dijon mustard
Salt, to taste
Protein ideas:
Shredded chicken
Canned tuna
Salmon
Crispy tofu
Optional Toppings:
Sunflower seeds
Parsley
Feta
Directions
- Coarsely chop salad ingredients and layer into glass jars
- Prepare protein of choice and dressing
- To serve, tip out contents of jar, add dressing, protein and toppings. Enjoy!
