Recipe: Meal Prep Salad Jars

Who has time for hours of meal prep? Not us. These quick & delicious salad jars are the perfect base for your weekday meals - just add your protein of choice! They're packed with veges and healthy fats, and come together in under 15 minutes. Win!

BePure Recipe: Meal Prep Salad Jars

Ingredients: (makes approx 4 jars)

2x small heads of cos lettuce
2x capsicum
1x avocado
1/2 a red onion 
1x punnet cherry tomatoes 
1x can of drained chickpeas 

2 Tbsp balsamic vinegar
2 Tbsp olive oil
1 tsp honey
2 tsp dijon mustard 
Salt, to taste 

Protein ideas:
Shredded chicken 
Canned tuna 
Crispy tofu 

Optional Toppings:
Sunflower seeds


  1. Coarsely chop salad ingredients and layer into glass jars
  2. Prepare protein of choice and dressing
  3. To serve, tip out contents of jar, add dressing, protein and toppings. Enjoy! 

Want to level it up? Try roasting your chickpeas with some paprika, cumin, salt, pepper & olive oil before adding to the jar!
